Several months ago, I purchased a Whynter ICM201SB Ice Cream Maker. Since then I have made ice creams and ices such as Italian Water Ice (Lime as well as Lemon) a couple of times a week. At the same time, I purchased a number of soft serve mixes to accompany my ice cream maker, including vanilla, pineapple, mango, orange, lemon, and lime. All are good, but of these my personal favorite is the lime. Though the dry mix contains natural lime, I enhance the lime mix with lime juice -- a considerable amount of lime juice -- and milk. The package calls for the addition of water, which is OK, but I prefer to use the mix as a base and enrich it. Here is my recipe for a typical preparation, which fills but doesn't overflow the Whynter ice cream maker bucket, when frozen. Into a blender on a digital kitchen scale, I weigh the following: Dole Soft Serve Lime Mix, 300 grams; evaporated milk, (1 can) 370 grams; lime juice 200 grams; Half & Half, 150 grams; and water 85 grams. Makes a bit less than 2 quarts when frozen. (The mix expands owing to ice being less dense than water and to the air beaten in during the freezing process.) [For the metrically challenged, consider all liquids above to have about the same density as water so 1 gram = 1 milliliter; There are about 30 milliliters per U.S. fluid ounce (actually 29.57ml/fluid oz.) 300 grams of mix is equivalent to 1.5 cups.] The blender is used to dissolve the mix. Weighing is faster, more convenient, and more reproducible than volume measurement. Besides you have less to clean. Making up a batch, getting it into the Whynter, and cleaning up takes under 10 minutes. A batch will be soft serve in 60 minutes. Leaving it in for an additional 60 minutes (chilling only), will result in a hard frozen product. To remove the hard frozen lime ice cream, the Whynter freezing bucket is placed for ~15-20 seconds in a pan of warm water. The ice cream is removed as a block by lifting the dasher. Then it is a simple matter to break off the hard frozen lime ice cream from the dasher into a container for storage in a freezer or to serve. I wear a disposable glove and just do it with my hands. I buy limes, when they are in season and inexpensive, juice them, and freeze the juice in water bottles. So I usually have a good supply of lime juice on hand, making this ice cream very easy and convenient. Today is Thursday. I made a batch on Monday and shared some of it on Tuesday with monthly lunch group along with other ice creams I had on hand such as banana-strawberry with pecans and chocolate chips (a granddaughter favorite), lemon, and mango. I will start this by saying you will need an ice cream maker for this but it tastes close enough to Disney dole whip to be worth the trouble. Unfortunately the instructions on the back are for a whole bag and not just a small machine. After some research I found that 1 cup of mix to about 3 cups of water is the perfect amount. It’s not an exact match but that may be down to the machine or my mixture being wrong but it’s close enough to hit the spot when I’m unable to go to Disney. ... show more

I have a Ninja creami and I bought the Pineapple, Lemon and Rasberry Dole Whip and it is the best. My kids love the Dole whip at Disney and this is what it is. Its a fun treat for everyone in my family. Looking forward to trying some of the other flavors as well.

  • The Real Small Batch Recipe
Flavor Name: Pineapple
Breaking down the recipe - 6.75 Qts of Water for the whole bag comes out to 27 cups of water. 4 Lbs of Dole Mix comes out to 14.2 cups. This is nearly a 1 to 2 ratio for mix to water. This is very sweet and recommend a 1 cup mix to 3 cups water. A lot of trial and error before getting this right.
