  • I do NOT recommend - keep looking don't be fooled.
Does this chocolate taste good? - Yes it tastes OK, but I would not define the taste as 'good'. It is more like 'acceptable but weak'. Does this chocolate melt and give a nice finish texture? - Yes, once you figure out the proper temper the finish will look pretty good. Does this chocolate have a dark appearance? - Yes it *looks* dark, but does not taste like dark chocolate. It tastes like cheap milk chocolate. Do I recommend this product for candy making? - Not unless you don't care about how the chocolate tastes. It's not *terrible* but it isn't anywhere near as good as basic semi-sweet chips (dark chocolate) you get at your local grocery store. Is this chocolate affordable? - Yes, for what you get I would say this chocolate is an affordable alternative. Why am I giving it only 2 stars? - Because I ordered 2 bags so finish off some homemade peppermint patties. The package arrived quickly but one of the bags was torn. Sure, it's 'only chocolate'. Sure it won't 'go bad' per se. BUT - this is a food item and I (and you too!) have every right to expect that *ANY* food item should arrive properly sealed and in damn near pristine condition. Fact is the corner at the top was torn and the zip seal was open. Not enough to allow anything to spill out, but definitely enough to let any bugs in. No I did not find any bugs - but that is beside the point. Nikki's Wharehouse should be glad I didn't give a single star for this review because this is totally unacceptable. No debate - unacceptable. Another reviewer stated that this was not dark chocolate but more like milk chocolate. This is not exactly accurate because there are no milk solids used in the ingredients list. However the ratio of cocoa solids to sugar/fats/oils is nowhere near what would be considered dark chocolate. So when you bite into whatever candy you made you have an expectation due to the dark coloring but there is no 'bitter' to it, and the chocolate flavor closer resembles milk chocolate (cheap milk chocolate at that) despite the dark appearance. In addition to the not-so-good flavor the ratio used for this product greatly affects the temper, and the temperature range needed to get a nice crisp/cracking temper to your finished candy. My usual technique is to heat to 110-120F, let cool to 85-90F, 'seed' with a few native pieces, allow to continue to cool to 80F, then slowly heat back to 86F - then start dipping/pouring into molds whilst maintaining proper temper temperature. Due to the very low ratio of cocoa solids and the (seemingly) high ratio of fats the 'normal' temperature range (86F) results in a partly solidified mess - completely useless for dipping. Instead I found I had to raise the temperature almost 10 degrees to close to 94F! This can be detrimental when working with caramel or other soft centers. HOWEVER - if you are 'mass producing' for a Girl Scout/Church/other large event OR what you are making does not rely on good dark chocolate flavor then this is in fact an affordable alternative. And let us all be honest - the only reason any of us on here bought this product was that we were looking for a more affordable alternative. Just make sure your bags are sealed and not torn. :( ... show more

  • Delicious!
I always use Ghiradeli dark choc for my Christmas caramels, but the company had a shortage this year so I had to find a substitute! This chocolate taste the exact same. Could not tell a difference in our blind taste test!! And this is cheaper!!

  • Valentine's Day for the Win!!!!
Decent melting chocolate...Check, Strawberry's...Check, cherries...Check, frozen banana...Check. Large wine glass and bottle of wine...check. Wish I took pictures, quite proud of my work but....my wife ate it already. Advice to those who buy flowers and chocolates.... 🛑 I made chocolate covered fruits for my wife for the past 5 years. I usually go to the store to buy the kit but gave this product a try. Melts well, tastes good. I'm not a fan of dark chocolate but this was surprising nice. I think you get a better deal than the kits with this also. Things to get; Parchment paper, a very large wine glass, fruit. Heat up the chocolate 30 seconds in the microwave and stir up don't go over a minute at a time or you can burn the chocolate. Make sure fruit is washed and padded dry, dip fruit, set on parchment paper wait for it to harden again, place covered fruit in large wine glass. Accompany that with a bottle of wine and give your significant other the set... You made it so be proud. Good luck. ... show more

  • Best flavor ever!
Merckens is the best chocolate I’ve ever used and have bought it every year for the last 10 yrs at least! Everyone I make can’t for absolutely raves about it!

  • Good melting chocolate that’s convenient and reasonably priced
It’s really hard to find good chocolate for homemade candies anymore. I finally found a store that sold good chocolate, and it turned out to be Merckens, which came with high recommendations from the chocolatiers. It tastes good and has that sheen that makes finished candies look enticing. You just can’t get that with a bag of chocolate chips from the grocery store without complicated temperature variations and a lot of luck. I moved over an hour from that store, and and then I realized I could save myself a considerable drive by purchasing Merckens here. I am thrilled. Buy yourself a Wilton’s chocolate melting pot and you’ll be covering everything with chocolate to be the hit of every party. ... show more

  • Great product, good consistency
I just dipped pretzels in these chocolate melts and loved the consistency of the melts. I will never buy candy melts from local craft stores anymore. Like many reviewers said that the consistency was absolutely perfect. I did not need to add anything to thin out the melts. I look forward to using the white chocolate melts with candy colors in my next batch. ... show more

  • Easy to work with, but doesn’t have the classic dark chocolate flavor
This chocolate is very easy to work with and doesn’t require tempering. The end product has a nice coating and doesn’t give you that cloudy look (bloom). It doesn’t have a shine, the way that real tempered chocolate would, but I’m ok with that. My one gripe with it is that it doesn’t have that dark chocolate bitterness that people look for. It has a closer flavor to milk chocolate. On the up side, my family members that only eat milk chocolate will also eat this. ... show more
