Dalstrong makes a GREAT product, I know some of the "pro knife" guys may say there is better stuff out there or that they are "housewife" knives, but the truth is I owned a restaurant and we used Dexter and Victorinox white handles, which are also great knives, BUT they don't look great in my high end kitchen laying next to my 36" gas range, THESE DALSTRONGS DO and they perform better than any other blades I have tried from mild ot wild... I have a few "real Japanese" damascus/hammer knives and these look much better, feel much better, and cut on par with all of them... OK, now for this knife, I only use a few knives for cooking, a medium length paring knife, a serrated utility knife (6"ish), an 8" gyuto or chefs knife, a boning knife, and a 6-7" nakiri (I love the nakiri (vegetable cleaver) for veggies. This Carving knife will only be used for large fruits or veggies (watermelon, pineapple, spaghetti squash,etc) and for carving prepared meats, roasts, ribs, poultry, etc... Its replacing my 14" wusthof (a little too stiff for my tastes and a bit longer than is needed).. 1 more note, I store this with a winco USA carving fork, which for the money ($17) is an amazing tool and accompanies this well to complete a carving set... hope this helps someone, thanks.. ... show more

The media could not be loaded. I have been disappointed by high priced knives for over 45 years. The Dalstrong 12 inch Carving Knife with its Granton edge is absolutely the first knife that I was ever thrilled with, and which performed far beyond my best expectations. The Dalstrong company customer service is wonderful. My knife came in an exquisite gift-able box, stunningly sharp and finished like no knife I've ever seen. Balance and handling are incredible. I have been using this knife daily for three weeks, and the edge is still razor sharp. Cutting precise slices of sticky, flexible gravlax is something I consider the ultimate task for a carving knife, and it handled it with ease the first attempt, slicing paper thin. Every other sort of meat is child's play for this knife. My wife has always had difficulty with carving knives, but was astonished at the ease with which she sliced cured salmon, the very first attempt. Extremely easy knife to control. We're talking sharp of another kind. On the basis of my satisfaction, I just ordered Dalstrong's Colossal knife set. ... show more

  • Awesome knife for slicing large cuts of meat such as brisket
Size: 12" Slicing & Carving Knife
I purchased this knife for slicing brisket. The 12 inch ham/meat slicer arrived quickly and I put it to use two days later when I smoked a brisket. The knife performed beautifully and was a much better option than the 8in chef’s knife I have used in the past. I was able to produce nice, even slices out of an 18lb brisket, with none of the sawing or unevenness I was used to with a smaller knife. The handle has a good, solid feel to it. I really like the sheath that comes with the knife. It covers the entire blade and helps store the knife without worrying about the edge. The knife seems well-balanced. Great price. This is my first Dalstrong knife, but as my other knives are going on 14 years old, I will look into replacing them with additional Gladiator series knives. ... show more

  • Nice Slicer for the Price
Size: 14" Slicing & Carving Knife
Let me start by saying I have many knives. I have Yaxell Gou's, Wusthof Culinar's, Dalstrong Shogun and Gladiator, Chicago Cutlery, etc. Outside of the kitchen I have a good connection of folders with several ZDP-189 Spyderco's. I'll start by saying I generally think Dalstrong is overpriced made in China Japanese wanna be cutlery but the company does stand by their product and put a lot of time into making customers happy. See my other reviews on Dalstrongs. In this case I was pleasantly surprised. I got this early in the Dalstrong launch. The knife came sharp, the grind was good generally good design etc. Is it a Yaxell Gou, absolutely not. Is it a good knife for the price? Yes. I used it to slice homemade Bacon on the first cut. It did a great job, cut straight. The blade was straight front to back. I'm happy with the quality on this knife and the performance for the price for hardened German steel. The fit and finish was good but not great. What you would expect at this price range. I also used the knife to cut brisket as I live in Texas. The crust doesn't slice as well as a $30 dollar scalloped dexter russell. Those points just penetrate the crust better. Still, for many things I'm pretty happy and this is serving the purpose I bought it for. Update: I now have the shogun. For the cost the gladiator is a better deal. It's not as solid feeling and doesn't have as much back to the knife but will do the job as a slicer. It's a touch longer in the handle than the Shogun as pictured. ... show more

  • Nice looking and great functionality
Size: 12" Slicing & Carving Knife
I have a Dalstrong chef's knife that I bought last summer. It works great and is a thing of beauty, but it's not quite long enough to slice a large prime rib without some saw marks on the finished slice. Being somewhat analretentive, I opted to augment my collection with this carving knife in order to present prettier slices to my family and guests; it's not that they really care, it's that I care. This slicer works great. It's stiffer than the one I had a few years back and gave to my daughter as a house warming gift, so it slices smoothly with good control. The handle is good, too, so that I can render good purchase and therefore good control. And did I mention that it looks so impressive at the table that people simply assume that I'm good at what I do. Or, at least I think I look more professional. I looked at other knives in the same category and price range and decided on this one because I trust the brand based on my experience with the company, plus you'll notice that it comes with a sheath that is made to fit this knife. That is important to me because I store my slicer in a drawer. I highly recommend this slicer. ... show more
