I purchased this item for only one purpose, that was to grind dried cayenne pepper that I grow, to put in a shaker to sprinkle on my food. I have previously had difficulty grinding the pepper to pieces small enough to come out of the shaker. I purchased the "swing model" of this unit and I am glad that I did. There are cautions in the operating directions about over heating the motor if left running for more than 3 minutes. This was some concern to me in the beginning, but my concern was soon left behind. The cayenne pepper pods do not compact well in the grinder hopper so I filled the hopper all the way to the top. It only took maybe 20 seconds to pulverize most of them to powder the size of flour particles. I then filled the hopper again, not emptying the previous batch and another 20 seconds or so did the job once more. The amount of product in the hopper then ground up really well within just a few seconds of grinding. In order to get good results, the amount of product in the hopper needs to cover the blades. The swing model allowed me to tilt the grinder easily in both directions to aid in the grinding. I then emptied the hopper and allowed the motor to cool while I sifted the product and removed any small pieces not ground up. These pieces were returned to the hopper to grind with the next batch. This process worked really well, allowing the motor to cool and getting flour size particles of cayenne pepper. I grow my own pepper, dehydrate it and then grind it to make sure I am getting fresh home grown pepper to use on my food. This is very important to me since the pepper helps in keeping my blood pressure down. I am using this for grinding hard wheat berries for making bread. The machine is quite well-machined, robust, and easy to use. It is fairly loud - maybe about as loud as a vacuum cleaner or food processor. If you adhere to the recommended time limits and be sure to let it cool between uses, your motor probably won't burn out. I am mostly happy with it overall, but I do have a few complaints. The primary problem with this mill is the close proximity of the high-speed motor to the processing vessel. This causes a fair bit of heat to build up during processing, which if you are grinding wheat grain (which always has a little residual moisture), will form a yellow-brown flaky film on the bottom of the mill. If you are careful while sieving, you can keep this out of your flour. This mill uses mechanical cutting or chopping to render the processed wheat into flour. This works pretty well, but it is not the same as mechanical crushing (like in a traditional flour mill), so there are some parts of the wheat that simply do not get processed any finer. I suspect the cut flour does not have as much of the starch particles released as the crushed flour. The resulting flour will not be quite as fine as what you buy in the grocery, and after sieving/sifting (recommended) you will see some residual matter that won't pass through the mesh. I set this aside and use it for other purposes, since it doesn't seem to get processed any finer. The resulting flour is certainly fine enough to use for making bread, but perhaps not fine enough for cakes or fine pastries. The sieve and brush are fairly important in making flour. The sieve included in this package is OK, but possible could be a little finer. The brush is actually quite bad - like a 50¢ chip brush from a hardware store. This brush tends to loose a lot of bristles, and it is not very nice to end up with hog bristles in your bread. I would recommend buying a quality pastry brush, cleaning it and drying it thoroughly before using it (tug on the bristles to remove any loose ones). A tool that does not come with this machine, but would be very useful, would be a narrow (~1cm) plastic scraper which is very useful in cleaning the vessel between uses, primarily for scraping off the flaky film and getting material off the screws, blades and motor shaft. If you decide to get this machine or any other similar machine for grinding wheat, following are some tricks I have discovered while using it: - Keep everything scrupulously clean and DRY, otherwise you will just make a terrible mess. - When you fill the vessel with grain, only fill it so that it *just* covers the blades. Because the flour gets puffed up with air as it gets milled, filling it any further will result in a lot of flour falling out when you take the lid off after milling. Even so, make sure you give the lid a few firm taps to help the flour settle before you take it off. - Always make sure to tighten the knob on the tilt axis. It gets loose during tilting, and if it is loose when the motor starts up, the mill may alarmingly tilt over and grind at an angle, which won't be very effective. - 3 minutes should be sufficient for milling wheat. Any longer, and you will get flaking and/or burning of the wheat. If you want to go finer, take the flour out and sift it, clean out the vessel, let both the flour and the machine cool for 15-20 minutes, and then try again. Make sure that you have a finer sieve if you try this. - Don't let the milled flour sit in the vessel for too long after milling has finished. Because home-milled flour naturally does not have all sorts of anticaking agents added to it, it will tend to cake and form lumps. I have a few recommendations for the manufacturer for future product development iterations: - Somehow improve the thermal isolation between the motor and the milling vessel, perhaps by increasing the distance between them and placing a fan on the shaft between them and a corresponding heatsink on the bottom of the vessel. Currently, the motor housing stays fairly cool, but the milling vessel actually becomes very hot to the touch. This ends up damaging some of the material that is being milled. - Possibly integrate a thermal switch that will stop the motor if it or the vessel become too hot. - Include a higher-quality cleaning brush. - Include a small plastic scraper for cleaning. - Possibly include a finer-mesh (#40?) sieve in addition to the one supplied. - Include a better manual with usage recommendations and/or suggestions. UPDATE: After making a number of underwhelming loaves from the flour milled by this machine, I decided that I would invest in a better sifter. The machine is fairly effective and stable, but the coarser whole wheat flour requires an extended autolyze in order to yield something that is a touch lighter than a brick, and that can take up to 48 hours to achieve. Not wanting to wait so long, and in order to be able to use my home-milled flour for a broader range of baking, I purchased a #50 mesh electric sifter. The sifter that comes with this unit is something like #20 mesh as far as I can tell (the smaller the number, the larger the holes), so this should be something of an improvement. This grinder works great! It gets the job done when I have to grind up lots of herbs. I have been using my grinder for about a year and a half. Recently the timer stopped working properly and so I contacted the customer service for Golden Wall. They got right back to me, helped me figure out what was wrong, sent a replacement part and a helpful video to replace the part. It was quick and easy and now works good as new. Okay so I’ve always used coffee grinder for spices and chili peppers. I’ve blown through so many over the years…. Fed up, I decided to look further thinking there’s got to be something out there that can withstand grinding dried peppers and larger amounts as well. I came across this little beauty and decide to take the plunge. I figured I’ve spent this much already in all those little coffee grinders, I may as well just make a smart investment and go for it. Sooooo glad I did! For what used to take me about 20-30 min and a lot of headache, was now done in 30 seconds!!!!!! I’m just blown away. Only regret is I wish I had this gem sooner. Read the instructions first. They recommend tossing in rice or tea leaves for your first blend to take away the smell of the carbon which is totally normal to smell at first. I chose dried brown rice and it too, took about 30 seconds and it was as fine as flour. Smell, instantly gone! I recommend buying the tilt model that I bought. So easy to dump what you’ve blended into a bowl. Happy blending!!!! ... show more
