I noticed this red hot braiser when I bought my Wasatch Backcountry Iron skillet and was completely enticed by the price. I have a couple different la creuset dutch ovens and thought a smaller more shallow version might be a good addition to my collection. It is my new obsession. The lid really does "self baste" as moisture captured in the lid is evenly dispersed back into the base. My first use was caramelizing onions and was happy to find I could cook them low and slow, checking in on them every 15-20 minutes. They did not dry out or stick to the bottom. I made a pot pie next. Perfect. Then a frittata. No stick! I am not always so careful when it comes to dishwashing and my braiser looks brand new after more than two dozen uses. This is my first experience with Back Country and their Braiser. I had bought a 3qt Lodge braiser and wanted a smaller size which they didn't have. I came across Back Country's and the color was nearly the same so I went ahead and ordered it. The braiser was packaged very well and looks great. I cooked with it several times over the Christmas holiday and it was a breeze. I have had the Lodge Cast Iron Skillets for years but recently I found out I have Hemochromotosis (Iron Overload). It was suggested that I don't use them to cook anymore which is very disappointing. I decided to purchase the enamel cast iron skillets/braisers. I had enamel dutch ovens so the transition was easy.
