I bought my mixer a year and a half ago after researching all the mixers that are good for making bread (I was burning out the motor in my previous mixer from making bread). This seemed the best quality wise and also for the results of the food products according to reviews. I am SO glad I bought this mixer. We only eat homemade bread (not store bought) in our home, and bread made with this mixer tastes like it has been kneaded by hand. The texture always turns out good, even if I am not consistent with how much flour I use. To be honest, I like how the bread turns out with this mixer even better than what I can do by hand, and the work is so much easier! Some days I make 6 store size loaves of bread (separated into 2 batches) and 50 buns (1 batch) and this mixer doesn’t show any signs of being over worked. I love that the ingredients can be dumped into the top without a big attachment getting into the way. Pizza dough always turns out amazing too and is done way faster than if I didn’t have the mixer. I like to use the metal bowl for cookies as well; we make really big batches at a time, and the mixer has no problem with it. We also use the plastic bowl, but not as often as the metal bowl. I love that I can make MASSIVE batches of waffles and it all fits in the plastic bowl at once! Anyways, I never thought I would have wanted to spend so much money on something like a mixer, but it was worth every penny. I would easily buy one again if this ever broke down, but honestly, the quality seems so good that I don’t expect it to break down any time in the near or even far future.     • A Mixer for Serious Bread Bakers

This is a mixer for serious bread bakers. It works very differently than conventional mixers, and it takes some time to get used to. With some experimentation, you can develop the methods that work best for you. This is a workhorse of a mixer that I expect to use for many years to come. You can find You Tube videos and articles that discuss whether it is better to use the dough hook or the roller to mix and knead bread. Not surprisingly, some people prefer the dough hook and others prefer the roller. I have tried both, and have concluded that the dough hook does a much better job of mixing the dough while the roller does a much better job of kneading the dough. So, when I make a stiff sourdough, I use both. More specifically, I attach the dough hook and scraper, add all of the wet ingredients to the bowl, turn the mixer on at Level 1 speed, separately mix together the dry ingredients (except the salt), then slowly add the dry ingredients to the rotating bowl. I use a spatula to help incorporate the dry ingredients, then increase the speed to Level 3 for the full mixing period. I then remove the dough hook and scraper, and cover the bowl with plastic wrap during the autolyse period. After that period has elapsed, I remove the plastic wrap, add the salt, insert the roller and scraper, and run the mixer at Level 4 for the full kneading period. The roller does an impressive job of kneading the dough — it is the next best thing to doing it by hand. The mixer also comes with a plastic bowl and two sets of whisks to make cake batters, whipped cream, cookie doughs, pie crusts, and the like. These are perfectly functional but have a somewhat flimsy feel when compared to the hefty bowl and attachments that are provided for making bread. I think the Ankarsrum is ideal for someone who makes bread on a regular basis and only makes cake batters, etc., on an occasional basis. Ankarsrum sells a wide variety of accessories for grinding meat, making pasta, mixing smoothies, etc., but I have not bought or used any of them. All in all, this is an experienced bread baker’s dream mixer, and I am happy to give it five stars. ... show more
