Description

"An Early Meal" takes the reader on journey to discover the food culture of Viking Age Scandinavia. In the first part of the book one will learn about what and how the food was cooked and eaten. These facts are illuminated in the second part, which is a cookbook containing forty-two delicious recipes from seven different Viking Age settlements. Both parts of the book are thoroughly based on archaeological finds, historical cooking methods and current research. The two authors of the book have a long background in culinary history. Daniel Serra is working on a doctoral thesis on Viking Age food culture and is an experimental culinary archaeologist. Hanna Tunberg has a background as food connoisseur, taste expert and archaeologist. They have previously written a medieval cookbook "En sås av ringa värde" Read more

  • Beautiful but expensive book on history of food in the region; not many new recipes that I can use
First of all, this is a beautiful book which gives a nice history of foods that were available in different areas of Viking settlement. There is a lot of good basic information and beautiful artwork, as well as many colorful photos of people dressed in Viking garb. However, this is not a large book and so I found it to be very expensive at $49. It would have been worth the money to me had it provided a decent number of new recipes that I could cook and feed to my household or at feasts. Unfortunately, most of the recipes are either for simple, basic items that I already know how to make (savory porridges, simple breads, pickled vegetables, basic cheese, ale, etc) or for foods that are essentially nonedible to modern folk or have ingredients that are difficult if not impossible to obtain. As the authors indicate, there are no surviving recipes from the Viking age, so why waste the space in this small book to invent new recipes calling for eating horses, whole goats, making bread out of fresh blood, etc. ? Since the authors are making up brand new recipes, why not create recipes that people will actually be able to use? At any rate, this book is a delight to page through, and if you are new to Viking/medieval cookery, I think you will be much happier with the selection of recipes than I was. I was disappointed to find so few new recipes that I would be able to use. ... show more

  • A very good book for anyone interested in historical cooking
A very good book for anyone interested in historical cooking, nicely laid-out and illustrated. Because no actual recipes survive from the Viking era, ultimately all the dishes are speculative - but with good discussion of the methods and rationales that went into the reconstructions. The recipes I've tried thus far have all been solid; American cooks should be prepared to work with metric weights and volumes, but conversions are easy enough. Also contains helpful tables of what food items have been identified at archaeological sites, all in one place for easy reference. ... show more

  • An excellent book overall
This is a compelling and well-researched introduction to food in the Viking-era world. The recipes are presented clearly and are tasty too! I also found it helpful that it includes a glossary of ingredients with corresponding translations in the different Scandinavian languages, and with scientific names of the various plants. ... show more

  • ABSOLUTELY RECOMMEND
Fantastic cookbook, complete with images. The recipes are DELICIOUS, and there are some sauces and seasonings that after having tried them on Viking dishes, I'll be reusing on other more traditional meals. Be warned - these recipes are VERY authentic - from white goosefoot to goat leg, horse heart to angelica root - you will probably need to google substitutions. I had a great time recreating these traditional meals, reading the supplementary text, and trying new combinations of food. 10/10 would recommend ... show more
